Zone spacing between Interfaces

What is the recommended number of zones to have between multiple coplanar interfaces.

It depends.
Assuming each layer is a separate interface and that the overlap (function of stiffness and normal stress) is a small fraction of the zone size perpendicular to the interface, then 1 zone can work.
In practice you should generally do 2 or 3.
Where you can get into trouble is with a soft interface and/or thin zones compared to the surface area - then target face detection can see the next layer down as an option.
